In today’s post, I would like to share with you a meal prep episode I did in my Youtube channel. This is a different kind of meal prepping than what I’m used to doing.
I prepared make ahead breakfast dry mixes that I put in mason jars. Think of pancake mixes, homemade hot chocolate mix and my ultimate favorite… oatmeal drink.
They are great when you are crunch with time and you just want to have a quick breakfast. The oatmeal drink is especially perfect for grab and go breakfast. Just add water and you are set for the morning as I find it very filling.

EASY PANCAKE MIX
I have tried so many pancake recipes in my life and this by far is my favorite. It is from America’s Test Kitchen. Here is the video tutorial that shows the recipe and how they make them.
HOMEMADE HOT COCOA MIX
I followed a recipe on Pinterest but I also tweaked it based on my preference. This is not very sweet and you might’ve to add more mix to your water than the store-bought hot chocolate mix.
But I eventually found out the flavor profile I want. Next time I make it, I will add some dark chocolate morsels or chips to make it more chocolatey.
Here is the original recipe:
4 Ingredient Hot Cocoa Mix by An Oregon Cottage
Here is my version:
- 1/3 cup cocoa powder
- 1/8 tsp. salt
- 1/2 cup sugar
- 3 cups dry milk
- 2 scoops Collagen Peptides powder
- dark chocolate morsels or chips (optional)
Pulverize them in a blender so the mix will dissolve properly with hot water.
GRAB AND GO OATMEAL DRINK
I really love this oatmeal drink but if you are used to chunky oatmeal, then you might want to start with the small amount to check if you’ll like it.
After adding water, the mixture will be very thick and you might find some oat powder that are clumped together. I usually add a little water first then dissolve everything properly before adding more water. Make sure you use a very hot water.
As usual, adjust based on your preference and choose fruits that you like.
My recipe:
- 2 tbsp. powdered rolled oats (you may use instant oats)
- 4 tbsp. non fat dry milk powder
- 1 scoop collagen peptides
- 1 tbsp. dry fruit
- 1 or 2 tsp. sweetener of choice
Mix all ingredients together. Shake prior to adding your liquid.our boiling water to the mixture and stir properly.
